Give more info while parsing documents

Not strictly a bug - but we should give more info to user while parsing - so user doesn't think the LLM has stalled.

I have updated the message to read "Thank you for uploading the document. Give me a second while I process it...".

Also, I have just deployed some code which will actually make the file upload process faster so the delay should be shorter.
